Thanks Foxy!!!

Your asian inspriation has inspired me to defrost some pork chops from the freezer and start a liquid love juice for them to bath in for the day! Tamari soy sauce, ginger honey, maple syrup (cause i am cooking for two quebecers), a little sambal, dried oregano and thyme and I don't have any toasted sesame oil BUT sesame seeds toasted and sprinkled on top for the finishing in the oven will do just fine! Off to the store soon for the veggies.......hmmmmm I wonder what will be there?
Made some more spelt bread and double chocolate cookies!
It is Nicolie Gras on friday and I am thinking about a mexican festia for the night!!! Little Taco Pescado, Pollo Asado, Tequila......this could be fun!

  1. mmm...and then make the rind into crackling. Pig 'popcorn' is the best!
    Can you tell me how to make Pollo Asado sometime in the next day or so? I have a chicken to roast, and am doing groceries tomorrow afternoon....cheers

  2. Hi Foxy!! Pollo Asado is BBQ chicken. We cook it over an open fire in the back yard. Whilst being raw i will cut it and take the back bone out....yes with scissors....easier....then open it up flat (l like to keep the skin on, it is a little dangerous as the skin will catch on fire and burn but I think it leaves behind a great taste. I will salt and chili powder the chicken and then put it flat over the open fire. You have to stay with it and keep flipping it so that it will cook evenly and not burn and then you can add more salt and chili powder whilst being outside....this will also work over the BBQ but you still have to stay with it for the fire issue (this porcess can take up to an hour, that is how long ours takes). The cooking time will depend on the size as well as the heat of the coals. Inside the house I am making guacamole, fresh salsa, corn tortillas (when time permits, otherwise I will buy them), grating cheese (or use goat feta the salty hard cheese is a little more traditional), grated cabbage, refried beans, maybe some rice if time permits. There is also the option of the secret sauce which you can find in some places in Mexico...I am a huge fan of this especially when it is fish taco night. All it is, ketchup and tartar sauce. I will make my own version so it is fresh with tomato paste, honey, applecider vinegar, chopped pickles, dill, mayonaise and salt. I don't have a definate recipe for it but will try to put one together until then you will have to use your taste buds, hint....not too much tomato paste as it is concentrated...
    I hope you like this one as it is one of my favorite dinners to dive into and eat! Don't forget the TEQUILA!!!
