Time to get that garden going. I need dirt, lots of dirt!!!!
Made some spelt and rye bread the other day and although I am not a bread expert, everytime is getting better. This time I really worked on kneading the bread and keeping it moist by not adding flour after I brought the mixture together. It turned out great with a little sea salt on the top.
Jo got his favorite of Pate Chinoix,Shepard's Pie with our local beef in the freezer and we are trying to not spend money and use what we have so the topping was a medley of sweet potato, potato, parsnips, carrots, garlic, yams. I peeled the parsnip and carrots and left the skins (as always) on the potatoes for their goodness and nutritional benefits. Talk about using up the veggies. We had this with salad and loved every bite! Forgot to take pictures of dinner so you can use your imagination!!!
The potato, as well as the skin, is a great source of vitamin C, vitamin B6, copper, potassium, manganese, and dietary fiber. Potatoes and potato skins contain 18% of the recommended daily allowance of iron and 7.5 grams of protein, which is rarely found in vegetables in such high concentrations. Potato skins also contain a variety of phytonutrients, which are a natural source of antioxidants that help to prevent cellular deterioration of the body. The phytonutrients found in potatoes include carotenoids, flavonoids, and caffeic acid.
Keep sending me the questions and I will help as much as I can.
Have great day and talk to you soon!!!
