I am a huge fan of all the fresh fruit of summer. Here is a quick and easy recipe for a bruschetta to put out for your friends with a crisp white wine.
Dice up half an onion.
Dice 2-3 Apricots (depending on their size)
Fine chop 3 figs (or however many you like)
Chop a sprig or two of thyme.
Mix all together in a bowl and your topping is done.
Make, buy or find some toast points, croustini, toasted rye bread, or whatever you want to put this on. Spread goat cheese on the said item of choice and place bruschetta topping on last. On to a plate, serve and eat!!!
This also works well with any fresh summer fruit, add onions and a fresh herb for the savoury, fresh fruit for the sweet and a dried fruit for some texture. Chopped nuts or seeds can also be added for extra flavour but don't add too much as you will take away from the simplicity of this delicious appetizer.
